Rocky Road Fudge
One of my favorite parts of the Christmas Season is… Baking! I admittedly don’t do a ton of baking throughout the year, but when the Holidays roll around, I totally make up for it.

The reason I don’t do much throughout the year is because, well, it tastes so good that I eat way too much. I would not like my waistline if I snacked on these sweets all through the year!

Today I’m excited to share with you a recipe for Rocky Road Fudge that is super easy – you probably have most, if not all, the ingredients in your cabinet right now!
This fudge is sweet and salty {yes – it’s addictive}, easy and fast to make, and one that my Mom and I always made for neighbors and parties for Christmas!

Are you ready?
Like I said, the ingredients are super simple. The original recipe that I inherited called for 2 sticks of butter, and although it’s super delicious, I just couldn’t face putting in that much.
So I cut it in half and it’s still just as yummy! You’ll find the full ingredients list at the bottom of this post, with full recipe.
Start by melting, over low heat, the butter, peanut butter, and chocolate chips. Once the mixture is super smooth, which only takes a few minutes, you’ll add your vanilla and a handful of peanuts.
Now is the time to enlist a willing helper! You need to spread your marshmallows all over the bottom of your pan in one layer, covering the entire bottom. I line my pan with wax paper so it’s easier to remove and cut your fudge once it’s set.
If you want a thicker fudge, use an 8×8 pan. This time around, I used a 9×13. I think I like the 8×8 and a thicker fudge better, but make it twice and decide for yourself! 😉
Pour your melted mixture over your marshmallows and chill in the refrigerator until your fudge sets – usually about 45 minutes or so.

Method
- Put Chocolate Chips, Peanut Butter, and Butter in a medium saucepan. Melt over Medium Low Heat until melted and smooth, stirring occasionally. When melted, add vanilla and stir. Then add peanuts.
- While chocolate mixture is melting, line a 8×8 pan with wax paper. Cover the bottom of the pan with miniature marshmallows. Be sure to fill in all spaces.
- Pour melted chocolate mixture over the marshmallows and chill in the refrigerator until fudge is set – about 45 minutes.
