Quick and Easy Bundt Banana Bread

Banana Bread

When it comes to cooking for my family, I really enjoy the activity, but not so much the prep and clean up.  I also like a recipe that it’s simple and uses ingredients that I already have in my cabinets and that can use produce before it goes bad.

This Banana Bread recipe does just that and I thought I would share it with you all!  I’m hoping to start sharing some of my favorite recipes that we make again and again in our house so you can enjoy them too.  Best of all, most are quick and easy… and delicious!

Quick & Easy Bundt Banana Bread

Banana Bread Ingredients

A short list of ingredients:

  • Box of Yellow Cake Mix
  • 3-4 Ripe Bananas
  • Handful of Chopped Pecans {optional}
  • 2 Eggs
  • 1/3 cup of Vegetable Oil {or substitute}

My Banana Bread always turned out kind of dry until I learned the secret of using the Yellow Cake Mix.  Sure, it makes it a little sweet, but oh so moist and delish!

Banana Bread

While your oven is pre-heating at 350, mix all of your ingredients together.

Bundt Banana Bread

I really like using a Bundt pan for this bread because it breaks it up a bit and makes it not so heavy than if you used a loaf pan.

Banana Bread

It’s only a quick cooking time of about 30 minutes {you’ll definitely need to adjust your time depending on type of pan, altitude, and oven} for this deliciousness!  I simply pull it out when it’s nice and golden and a fork inserted comes out clean!  Cool for, well, as long as you can resist cutting into the Banana Bread!

Morning Breakfast

Because of it’s sweetness, I LOVE to serve it like a coffee cake with a strong cup in the mornings!  The girls enjoy it too – sans coffee – and a pan will usually only last us a few days!

  1. Pre-heat your oven to 350.
  2. Mix together all of your ingredients, then pour into a bundt pan. This banana bread can easily be made in a loaf pan or even as muffins, but there's something so pretty about that golden bundt shape!
  3. Bake for about 30 minutes [be sure to check as type of pan and altitude will make a difference]. Once your fork comes out clean, your banana bread is ready to enjoy!

  1. Quick and easy in the kitchen makes this lady a happy gal! Annnnnd so does banana bread!! Definitely making this!! And conveniently I only have a bundt pan for a cake pan lol!! Perfect!
  2. I've never thought to bake banana bread in a bundt pan. I always use mini muffin tins, makes it easy for The Boy to grab one!
  3. You have just succeeded in making me VERY hungry!! I will give this recipe to my Mom who always has bananas in the house and also is always having women over for Bridge games!
    1. It would be PERFECT for her! Hubby and the girls won't eat bananas once they get a bit too ripe, so I make this quite often. Ok, ok - I admit, I buy extra bananas just so I can make it and 'PRETEND' it's because they went bad too fast. ;)
    1. I know! I always made mine from scratch and we tried one from a bake sale that was so moist. Looked at the ingredient label and it said "yellow cake mix" - I was like "AHA!".
