Pineapple Mango Avocado Salsa

It’s Summer and one word that keeps coming up in my kitchen in the summer time is fresh. Fresh fruits, fresh vegetables, fresh recipes – summer means fresh to me and today I’m sharing one of my favorite new fresh salsa recipes featuring 3 of my favorite foods… Pineapples, Mangoes, and Avocados!

Fresh Salsa

Even though Tennessee isn’t exactly known for it’s tropical trees, I can find a great selection of fresh produce in our local stores – which makes it feel like we have mango trees growing right in our backyard [which just happens to be a dream of mine].

I am loving this fresh salsa as a topping for tacos, in a delicious quick chicken wrap for lunch, or even as a snack with tortilla chips. The best part is I always have the main ingredients on hand and it’s something I can whip up as a single serving snack for myself or a larger batch for dinner.

Fresh Mango Salsa

During prep, a quick wipe down of my knife between chopping kept all my ingredients fresh and my counter top clean, which is important when you’re chopping red onions and jalapeno peppers.

Pineapple Mango and Avocado Salsa

Ingredients

  • 1 cup fresh pineapple
  • 1 mango
  • 1 avocado
  • 1/4 cup red onion
  • 1/4 jalapeno [or as much as you like!]
  • 1 lemon
  • salt & pepper to taste

Instructions

  1. Chop pineapple, mango, avocado, red onion, and jalapeno.
  2. Combine in a bowl.
  3. Squeeze the juice of 1 lemon over your chopped ingredients.
  4. Season with salt and pepper and enjoy!

    Ah my husband would LOVE this recipe! He is totally into avocado and mango right now. This would be super refreshing in this California heat that we have! Thanks for sharing! Definitely going to have to give it a try it looks simple enough!
