Mediterranean Wraps

I am constantly looking for ways to make my family eat healthier. Now that our schedules are getting super busy, it’s so easy to make the same meals over and over.

One area that our menu definitely lacks is that of Omega 3 Fatty Acids, mainly found in fish dishes. I admit that I don’t cook with fish often because I’ve never really been a huge fan. If I eat fish, I really don’t want to feel like I am.

So, my sweet hubby put his Chef Hat on and came up with a new recipe a few weeks ago to get our whole family eating tuna. Turns out, he’s quite good at coming up with healthy tuna recipes after all!

Rob actually loves to be in the kitchen. I’m sure that comes from his family – all of his family loves to cook and come up with different dishes to try. I’m not so adventurous. I stick to what I know and rarely venture away from a recipe card.

Rob delights in his adventure cooking side and feels like he’s made a huge win when I actually like what he dreams up – and ladies and gents… this one is a Winner!

We’ve been using the final spread in many different ways, although I think the Mediterranean Tuna Artichoke Wrap is my favorite way to enjoy it!

Mediterranean Tuna Artichoke Wraps

Ingredients

  • 1 can of Ocean Naturals Skipjack Light Tuna
  • 3 Cherry Tomatoes {sliced or chopped}
  • 1/4 Chopped Onion
  • 3 Chopped Mushrooms
  • 1/4 Jar Artichokes
  • 1 tbsp. Minced Garlic
  • Lemon Juice
  • Olive Oil
  • Salt & Pepper

Instructions

  1. Heat olive oil in a medium skillet.
  2. Add Garlic and Onions and cook until just translucent.
  3. Add Ocean Naturals Skipjack Light Tuna. Stir around your pan.
  4. Add mushrooms, artichokes, and tomatoes and cook just until tomatoes start to soften. You're essentially just warming everything up nicely.
  5. Squeeze lemon juice and season with salt and pepper.
  6. Spoon into wraps, over a bed of rice... However you choose to enjoy!

    I would have never thought to mix artichokes with tuna but I bet it’s delicious! And I really need to try that husband-making-dinner thing around here, that’s a great idea too. 😉

      Haha, Jess – well, me neither. It was a LAST minute decision by the husband. He was like “What should I add? And went looking through the fridge.” Luckily it was the perfect addition {I can’t always say that about his ideas!} And YES! He doesn’t cook TOO often, but when he does, it’s usually worth the HUGE mess he makes in the kitchen! 😉
