My family loves Poptarts. We love them toasted and we love them straight out of the package. Honestly, I love to eat a Poptart as a snack even more than a breakfast.

And we’ve tried just about every flavor that is made. But when you look at the side of the box and see the ingredients, you may start to doubt one of your favorite treats – or at least I did.

Why should you make homemade poptarts?

The answer is the same reason we make homemade anything – to control the ingredients. They are also easy to make and fun to personalize with any fillings you can think of! But since we’re coming up on Fall, pumpkin poptarts are at the front of my mind!

Weelicious Lunches: Think Outside the Lunch Box with More Than 160 Happier Meals is all about thinking outside the lunch box. Honestly, that’s what I try to do with our lunch bento boxes too.

Even if I want to make a PB&J for Sophia, I try to mix it up. Make it a different shape, add in a secret ingredient. Catherine includes 160 recipes just along those lines in the book and makes it totally fun!

Along with recipes, Catherine gives great advice on ways to serve vegetables to young ones to make it more fun, as well as listing pantry staples – things you should ALWAYS have on hand.

Since weelicious Lunches is, well, all about the wee ones… I let Sophia help me make our first round of Pumpkin Poptarts when she was little, to try out for the first time! Since then, it’s been a staple treat in our house.

These are incredibly simple to make. Sophia actually did almost all of the work herself, even at 3 years old! The filling is delicious and the pie crust are so deliciously flaky that they make an incredible breakfast, snack, and addition to a lunch box.

Her favorite part was definitely cutting out the pumpkins with our pumpkin cookie cutter and making faces on them!

Here’s what you’ll need to make these easy homemade pumpkin poptarts:

  • Refrigerated Pie Crust
  • Pumpkin Puree
  • Brown Sugar
  • Pumpkin Pie Spice

If you know me, you know I like easy recipes. That’s why I choose to use refrigerated pie crust to make these. Of course, if you’re a more advanced cook, you could make your own pie crust!

The filling possibilities are endless, but I definitely recommend trying these homemade pumpkin poptarts with your family!

Homemade Pumpkin Poptarts

Ingredients

  • 1/2 cup Pumpkin Puree
  • 2 tbsp Brown Sugar
  • 1/4 tsp Pumpkin Pie Spice
  • 1 pkg Premade Pie Crust

Instructions

  1. Combine the pumpkin, brown sugar, and pumpkin pie spice. Cut out fun, pumpkin shapes from your pie crust. Place 2 tsp of your pumpkin mixture on one cut-out pumpkin. Lightly dip your finger in water and rub the outer of the pumpkin so that your dough will adhere to one another. Place another cut-out pumpkin on top!
  2. Bake for 18 minutes at 400 degrees, or until golden brown.

I think these pumpkin poptarts are great for adults as well as kids. They would be terrific for a Halloween party or for any fall party.
