Easy and Fast Pico de Gallo Recipe

This easy and fast Pico de Gallo recipe is one to keep. When you need a game day appetizer, something to top those tacos, or just a quick snack for yourself… you can whip this up in a pinch!

I actually have to completely credit hubby with this recipe. He’s been making, what we refer to in our house as homemade salsa, for a few years now. Although to us it is a fresh salsa recipe, most see the freshness as Pico de Gallo, which is why I’ve called it that here.

It’s so fresh, so easy, and even better… so tasty! And can I just get a “Hallelujah” for not having to make it myself?! Rob tries to tell me how to make it, but I pretend I always don’t know how just so he will. I mean, come on, it always tastes better when someone else makes something, right?!

While our favorite time to make this fresh salsa is in the summer when we have our own produce growing in the garden, it’s just as good all year around.

Yes, we just discovered those adorable soft tortilla taco boats last month, but they’ve become a staple in our taco ingredients already. The girls get so excited when I tell them that’s what we’re having because they love filling their taco boats with whatever they want… which usually includes lots of refried beans and taco meat.

However, this day hubby got even more exotic and put together a lovely marinated pork version of Taco Boats. While that recipe is for another time, let me just say, it was spicy, sweet, and delicious!

But my favorite part is still that yummy, homemade Pico de Gallo recipe on top! And I love to eat it on top of my refried beans and rice too.

Pico de Gallo

Pico de Gallo

Ingredients

  • 2 Roma Tomatoes, chopped
  • 1/2 Onion, chopped
  • 1/2 Jalapeno [optional], chopped finely
  • 1 clove of Garlic, chopped finely
  • 1 Lemon
  • 2 tbsp Cilantro, finely chopped
  • Salt & Pepper to taste

Instructions

  1. Chop all ingredients and stir together.
  2. Cut Lemon in half and squeeze all juice.
  3. Season with salt & pepper to taste.
  4. Try to share... 🙂

    My husband loves when I make this. Sometimes I add chopped cucumbers too.
