Quick and Easy Meatball Subs Recipe for Weeknights

When it comes to feeding my family during the week, I look for meals that are easy, delicious, and come together fast. Meatballs subs are a family favorite for all three reasons!

It seems like every week of the year just gets busier. Soccer season is winding down, but that means Girl Scouts and school programs are starting to get more frequent.

Days are getting shorter and cooler, which means less play time outside and more time trying to keep the kids from making a mess with all that energy that needs to escape!

During the few hours after school we have to make time for those ball games, school events, homework, and somewhere in the middle – dinner prep!

That’s why you’ll most often find easy, quick dinners on our weekday menu. One of my family’s favorites is a fun and easy take on an Italian classic.

While I would love to create homemade meatballs and marinara sauce from scratch, I’ll be honest, I don’t have time or the talent! That’s why I rely on products that do bring the delicious homemade taste that make it easier on me, and quicker in the afternoons.

I place them right on a baking dish and let them bake while I help the girls with their homework. They come out of the oven deliciously golden brown and ready to be put onto the subs.

While I usually do take the shortcut of using a jarred marinara sauce, you could always make your own. Since these are a favorite quick weeknight meal, the shortcut is much easier and faster for us.

You can choose frozen or fresh meatballs. I’ve found that both work great for this meatball sub recipe.

When I can get a delicious meal on the table in between ball games, homework, and Girl Scouts and one that everyone will eat, it’s a win for everyone! Meatball subs are one of my favorite dishes to prepare, because they come together so easy and quickly, and because everyone loves them!

Ingredients

  • 4 Sub Loaves
  • 1 pkg. Meatballs
  • 1/2 Jar Marinara Sauce
  • Mozzarella Cheese
  • Parmesan Cheese

Instructions

  1. Preheat oven to 375.
  2. Line a baking pan with aluminum foil. Bake according to directions on package.
  3. While meatballs are baking, warm marinara sauce in a saucepan over medium heat.
  4. Slice sub rolls in half. Place meatballs on rolls and cover with marinara sauce. Sprinkle cheese [if you're like me, sprinkle LOTS of cheese!]
  5. Place subs open faced into oven for just about 5 minutes, just long enough to melt cheese and crisp sides of bread.
  6. Enjoy!
