Spring is here, no really, I think it’s sticking around this time, and I couldn’t be happier! With Spring comes about a million things on the calendar, though, which is nice, but it definitely adds to the day-to-day stress as a Mom. Trying to coordinate everyone’s schedule, plan around soccer practices and homework, and cook a delicious, wholesome meal is quite the challenge on some week nights.
You see, we have a Kindergartner who loves to learn. She’s also a Kindergartner who loves to show what she knows so even on nights when she doesn’t have homework, Sophia often makes up homework for herself. She still gives herself time to play, but she’s just as happy sitting at the dining room table with her Dad or me writing down every word she can think of that she knows how to spell!
Those nights are when my favorite kitchen appliance is my slow cooker. I am the world’s worst at procrastinating starting dinner early enough so 4:00 pm rolls around and I’m trying to hurriedly defrost meat and the situation sometimes ends with me throwing my hands up in the air. But on these busy days, the best thing I can do is pull out my slow cooker and plan the meal 6 hours in advance.
Even when you use your slow cooker, there’s still a bit of prep work involved, right? Well, there is with some meals. Today, I’m excited to share with you these easy dinner ideas from Tyson® Meal Kits. During my latest trip to Publix, I picked up the Tyson Slow Cooker Beef Stew Kit. My family loves Beef Stew and I loved the convenience of not only having all the ingredients in the package when it was time to cook – but not having to shop for all of them separately too!
When it comes to easy dinner ideas, this one takes the cake. The Kit comes with the meat, which is already cut if you choose the Beef Stew Kit, vegetables [carrots, potatoes, and onion], and the dry mix to create the delicious Beef Stew gravy. You simply mix the dry mix with water and throw all your ingredients into your slow cooker to have a delicious, hearty meal for your family in just about 6 hours!
It might be a Southern thing, but my family can’t have Beef Stew without cornbread. It took me a few years of being married, but I’ve finally gotten my cornbread recipe down to a science… although I don’t have a recipe. I just keep pouring ingredients until it looks right. Now that sentence made me feel like a real chef!
