If there’s one thing my family loves on fall nights, it’s a delicious home cooked meal after a busy day. And boy are our days busy this year!
With school functions, two soccer team practices and games, and everyday life events, it’s hard to find down time in our schedule. You might think that also means it’s hard to find time to cook those delicious meals during the week, but it doesn’t!

I’m the Queen of 30 minute meals in my house and just because you only have a half hour to prepare a meal, doesn’t mean it can’t be delicious and nutritious!
While I love a quick meal, I love a one pan meal even more. That means that not only did the prep and cooking take a short amount of time, but cleanup does as well. Some of our family’s go-to meals use the marinated fresh Smithfield pork tenderloin.
They really are the epitome of fresh and fast because they each come marinated, taking so much work out of dinner prep! I tend to always grab the Smithfield pork loins because it’s a leaner cut of meat and sized perfectly for our family of six.

This Smithfield pork loin recipe definitely ranks high – especially with the baby Yukon Gold potatoes and asparagus surrounding it.
While the Smithfield Pork Tenderloin is delicious on its own, I decided to kick ours up a notch with bacon, because, well, it’s bacon!

I wrapped the tenderloin in 4 slices of bacon and surrounded it in my glass dish with a lovely, bright array of vegetables. The prep on this meal was literally under 5 minutes – winning!
The thing I love about quick, fresh meals is that they’re just perfect for nights when we have soccer practices. Once we get home, I have just enough time to put the one pan meals in the oven and help the girls out of their gear, read a couple of short books for homework, then the timer is sounding because our dinner is done!

The pork comes out perfectly cooked in just 30 minutes and the asparagus and miniature potatoes on the sides soak up all that flavor perfectly. But let’s keep these secrets between us, because this pork loin one pan meal tastes like I’ve been working in the kitchen all day!
Bacon Wrapped Smithfield Pork Tenderloin with Fresh Vegetables One Pan Meal Recipe:
Bacon Wrapped Pork Tenderloin & Veggies

Ingredients
- Smithfield Marinated Fresh Pork Tenderloin - Roasted Garlic & Herb
- 4 pieces of Sliced Bacon
- Asparagus
- Baby Yukon Gold Potatoes
- 1-2 tbsp of EVOO for drizzling
- Garlic Powder [optional]
- Salt & Pepper
Instructions
- Preheat oven to 425.
- Cut open and remove your Smithfield Fresh Pork from package.
- Wrap 4 pieces of bacon around the tenderloin to completely cover it. Lay inside a glass baking dish.
- Wash and dry your Asparagus and Potatoes. Place around the outsides of the tenderloin in your glass baking dish.
- Drizzle vegetables with EVOO.
- Use salt, pepper, and garlic powder [optional] lightly on your veggies. No need to season the pork, it's already done for you!
- Bake for 30 minutes at 425 degrees.
- Enjoy!
