If you follow me on instagram, you probably saw a few surprising subjects in my pictures last week. Instead of sharing pictures of my girls [like I normally do], I was sharing pictures of cows! Yes, a little surprising, but I couldn't help myself because they were so cute up close. In fact, I saw more cows last week than I've seen in a long while - and that's saying a lot since I live in rural east Tennessee. I had the amazing opportunity to go on an Organic Farm Tour with Stonyfield Organic. I expected to learn a few things about organic dairy farms, but I was amazed at the knowledge and passion I returned to Tennessee with after just a 3 day farm tour. How many of you have a ton of zucchini in your kitchen right now that you've gathered from your own garden? Unfortunately I don't have that issue this year, but I definitely have in years past. Since we just moved in Spring, we didn't get a chance to plant our organic garden, but next year I hope we have zucchini up to our ears! Zucchini is one of my favorite vegetables to grow - it's relatively low maintenance, it's a mild vegetable that I can usually get the girls to eat, and it's so versatile as an ingredient - from muffins to baked and fried dishes, it's easy to use that zucchini up!
