Chicken Salad Stonyfield Greek

Because I’m a Stonyfield Yo-Getter, I had the fantastic opportunity to try some of their newest Stonyfield Greek Yogurt Flavors over the past couple of weeks.  My yogurt actually arrived while we were away at Disney, but my Dad was nice enough to bring it inside [and not eat it all] before we got back.

The two newest flavors, in the line of Stonyfield Greek, are Cafe Latte and Black Cherry.  I was curious about Cafe Latte as a yogurt flavor so it was the first one I dug into when we got home.  I totally loved it and so did someone else…

You Gotta Try This KidSeriously.  She was obsessed.  We may have a coffee drinker on our hands in a few years.

The taste is just enough coffee without overpowering your taste buds and the perfect amount of creaminess that Stonyfield Greek always offers.  Along with the two new flavors, Stonyfield perfected their recipe of the classics – Blueberry, Superfruits, and Strawberry and they’re even yummier [if that's possible] than before!

Chicken Salad Made with Stonyfield Greek Yogurt

I’d love to take credit for the substitution in the Chicken Salad, but it was honestly all Rob.  He made me so proud when he declared, “Hey, I’m gonna try putting the Greek Yogurt in here instead of mayonnaise!”  He used Strawberry on his impromptu Chicken Salad Sandwich, but for this one I used the new flavor, Black Cherry.

A delicious chicken salad that's easy to whip up made with a tasty and much less calorie Stonyfield Greek Yogurt Base.
Serves: 2
Ingredients
  • 2 Small Chicken Breasts, shredded
  • 1 container Stonyfield Greek Yogurt, your choice of flavor
  • ½ Apple, diced
  • ¼ cup Pecans, chopped
  • 2 tsp Sugar
  • Raisins, Dried Cranberries [optional]
Instructions
  1. Mix all of your ingredients together and ENJOY a delicious chicken salad guilt-free!

  1. Great idea replacing yogurt for mayo, adds the creaminess as well as probiotic cultures.

  2. In the past, I have used mayo to make chicken salad. But I am trying to eat healthier and Greek yogurt is much better for me than mayo, I’ll have to see if the yogurt changes the taste for the better.
