An Easy Meal for My Hardworking Husband

To say my husband is an on-the-go, hardworking man is a slight understatement.  Not only does he work hard at his day job – eight to 9 hours a day with a 30 minute drive both ways – when he gets home in the evenings and on the weekends he’s at 100% with playing with the girls and helping around the house.

In addition, he makes time for keeping himself healthy by exercising daily, pledging time to restore our 1966 Ford Bronco for our family of four to enjoy, and doing husband-ly duties that this Mama just can’t handle on her own {mowing the yard, tending the landscaping, and on and on and on…}

So, although we always strive to have dinner together as a family, there are a few nights out of the month that it just doesn’t happen and it’s just us three girls.


On nights like this, the girls are constantly asking “Where’s Daddy?” and I make sure that they understand that he’s helping to provide for them.  I always want them to know how much he gives for his family.

On nights like this, I also want to make sure that Rob knows how much I do appreciate his hardworking lifestyle.  Most nights I know he’s just going to be a little bit past dinnertime so I’m able to serve him the same Dinner as us.  Then other nights, he’s going to be way late – I just take care of me and the girls.  He’s totally fine with eating a sandwich or something else quick, but I often feel like I should make him a hot dinner.  It’s just usually so hard because I’m doing bath with the girls – or even bed time.


I will admit, my Filipino husband sure does love his Noodles and Pancit quick meals, but even those aren’t the quickest.  So, when I came across the new Velveeta Cheesy Skillets Singles while I was shopping at Walmart the other day, I thought they would be perfect for stocking the pantry for his late nights!


It was time to mow the yard {yet again – we’re so thankful for the rain we’re getting in east Tennessee but boy does it make the grass grow!} a few nights ago, so I thought I would try out the Ultimate Cheeseburger Mac meal that I had purchased.

From opening the package – microwaving for 60 seconds – then putting it on a plate, his meal was ready in under 2 minutes!  Talk about fast for a man that’s tired and hungry after weedeating!  It was a success!  I could have served the meal straight in the plastic bowl, but I knew he would appreciate a couple slices of organic tomatoes paired with the pasta.


He enjoyed it!  He was quite surprised at how fast I had him something ready to eat!  He said he could really tell that it was Velveeta with the thick, cheesy taste and was super happy with his warm meal that night.

The girls were happy that he was finally inside and at the table – for conversations with Daddy and…
