I promised to blog more about Sophia’s 2nd Birthday Party that was totally Mickey Mouse-inspired!
This post is all about the yummy treats that we had for the day!
The red and blue sodas went perfectly with the Red, Blue, and Black color scheme of the party. Coupled with the lovely paper straws {I got these from the fabulous Etsy Shop, Party Fairy} and Sophia Mouse Labels – they were a big hit!
I got inspired from Pinterest and tried my hand at these Marshmallow Pops! They were super easy, here’s a super fast recipe/instruction:
Put your marshmallows on a cookie sheet in the freezer for about 10 minutes before you start. This will help them stick to your straw better. When you get them out, make a small slit in each one with a knife. Stick in your lovely paper straw {Sophia did this part “all by herself”!}. Dip your marshmallow in your melted chocolate – I dyed ours blue with frosting food dye to match the party theme. Then you can dip them in sprinkles, coconut, whatever you choose! Let them dry!
These were a huge hit with the kids and the adults at the party!
Instead of a Birthday Cake, I chose to do cupcakes this year! We used the cute toppers out of my Mickey-inspired Printable set from Amanda’s Parties To Go. We made 48 cupcakes!?!

Along with the treats above, I had blue and red popsicles available for the kids, blue and red Pixy Sticks laying around on the tables, and blue and red Ring Pops!
